Crunchy Spirulina Energy Bars

  • Raw pumpkin seeds – ½ cup
  • Raw sunflower seeds – ½ cup
  • 1 banana – mashed
  • Shredded coconut – ½ cup, unsweetened
  • 2 medjool dates – pitted
  • Dried cranberries – ¼ cup


1. Using a food processor, pulse pumpkin, and sunflower seeds. Remove and place aside in small bowl. Using same food processor bowl, blend banana, dates, and cranberries until smooth. Add pulsed pumpkin and sunflower seeds along with all remaining ingredients into the food processing bowl and process.

2. Quickly shape mixture into bars. Place on parchment paper-lined plate and freeze for at least ten minutes to firm up. Keep frozen to enjoy in the future (bars take 10-15 minutes to soften). Enjoy!
