Spirunana Granola Parfait

From the market:

  • Tofu – 12 oz package, extra firm silken tofu, drained
  • 2 bananas – peeled, coarsely chopped
  • 1 lemon – juiced (2 tablespoons)
  • 1 small carton raspberries
  • 1 small carton blueberries
  • 1 granny smith apple – cored, diced
  • Date molasses – ½ cup
  • Granola topping

Instructions:

1. Combine tofu, bananas, lemon juice, date molasses, vanilla extract, spirulina powder, and salt in a blender and puree until smooth and creamy. Refrigerate for at least 1 hour before serving to thicken.

2. In 4 parfait glasses (wine glasses work too) spoon ¼ cup of banana cream into the bottom of each glass. Top that with ¼ cup granola topping followed by ¼ cup of the fruit salad. Keep repeat until all the glasses are full. Enjoy!
